Ube, or purple yam, is a must-have ingredient in today’s gastronomy. Renowned for its naturally intense color and its delicate, subtly sweet flavor, it is perfect for both milk-based beverages and the creation of original pastries. Preparation 1:
A tip for preparing an excellent Ube Latte, hot or iced.
Pour the contents of one stick of ube (2 g) into a bowl, then add 50 ml of hot water between 70 and 80 °C (avoid boiling water to preserve the aromas).
Whisk vigorously using a chasen (bamboo whisk), making “W” or “M” motions, until you obtain a fine, creamy foam.
If you do not have a traditional whisk, a shaker or milk frother will work perfectly.
Then add warm milk, dairy or plant-based, according to your preference.
For an iced version, pour the milk over the ube and add a few ice cubes before enjoying.
Preparation 2:
To prepare ube, sift the contents of one stick of ube (2 g) into a bowl, then pour in 70 to 80 ml of hot water (70–80 °C, not boiling).
Whisk vigorously with a chasen, making “W” or “M” motions on the surface until you obtain a fine, creamy foam.
Alternatively, use a shaker or a milk frother.
Enjoy immediately.
